Shrimp and Sausage skillet

Ingredients:

  1. 2 lb cooked, peeled, and deveined shrimp
  2. 1 lb loose Italian sausage
  3. 3 diced bell peppers (red, yellow, orange)
  4. 1 medium yellow onion, diced
  5. 1 zucchini, quartered and cubed
  6. 1 yellow squash, quartered and cubed
  7. 1 1/2 cups chicken stock
  8. 3 cloves garlic
  9. 3 tsp Old Bay seasoning
  10. pinch of red pepper flakes
  11. Olive oil
  12. salt and pepper

Directions:

  1. Brown Italian sausage, set aside
  2. In a large skillet on medium heat, add Olive oil to coat bottom. Add shrimp, and Old Bay seasoning. Cook about 5 minutes.
  3. Add sausage, peppers, onion, zucchini, squash, garlic, red pepper flakes
  4. Mix together, and add chicken stock
  5. Cover and cook for about 10 minutes, stirring occasionally.
  6. Remove lid, cook until chicken stock is mostly evaporated.
  7. Salt and pepper to taste. Garnish with parsley if desired.
